192 - Vietnamese Pork and Egg Stew

Vietnamese Pork & Egg Stew

2lbs pork belly or pork shoulder

1Tbs oil

6 hard boiled eggs (shelled)

3 cups water

2 cups coconut water

1/2 tsp thick soy sauce

2Tbs fish sauce

2Tbs sugar

2Tbs salt

Cut pork in 2 inch pieces, heat oil, then stir fry the meat until fragrant.  Add eggs, water, coconut water, thick soy sauce, fish sauce, salt & sugar.  Bring to boil.  Cover and cook over medium heat for 1 hour or until meat is tender.
