160 - Peach Cobbler with Assorted Berries

Peach Blackberry Cobbler

1 cup unsalted butter, melted

1 cup all purpose flour

1-2 cups of sugar - adjust amount based on sweetness of fruit

1 Tbs baking powder

pinch salt

1 cup of milk

4 cups fresh peaches

lemon juice

1 tsp lemon zest

1 tsp almond extract

2 cups blackberries (or 1 cup blueberries)

1 tsp cinnamon

2 tsp cornstarch for thickening if needed

Melt butter and pour into 9x13 pan.  In a bowl, combine flour, 1 cup sugar, baking powder, and salt.  Slowly add milk, stirring constantly.  Pour batter over butter melted into the baking pan.  Do not stir.  Place peaches and lemon juice in a pot.  Add cup of sugar.  Stir, taste and add additional sugar to get to desired sweetness.  Bring mixture to a boil, stirring constantly.  Add in lemon zest, almond extract.  Stir mixture and pour over batter but do not stir.  Sprinkle blackberries and then cinnamon - do not stir.  Bake 375 for 40-45 minutes - until golden brown.
